Ocean Blue Smoked Salmon Bruschetta


  • 1 small baguette thickly sliced on an angle
  • 2 tbs extra virgin olive oil
  • 2 tbs basil pesto (optional)
  • 125g fresh bocconcini or goat’s cheese
  • 1 small Lebanese cucumber, sliced lengthwise into thin ribbons
  • 50g Ocean Blue Smoked Salmon (or Ocean Blue Smoked Trout)
  • Watercress or chives, chopped for garnish
  • Black Pepper


Brush both sides of sliced bread with olive oil and grill each side until toasted and golden. Spread each slice with a little basil pesto. Add a slice of bocconcini or goat’s cheese, arrange a ribbon of cucumber and top with a piece of smoked salmon. Garnish with watercress or finely chopped chives. Season with a little black pepper.
